Head Chef Required in Dubai

We are currently looking for a Head Chef to join Al Ghurair Hospitality

Purpose:

To manage the overall kitchen operation and personnel as a successful profit center, ensuring maximum guest satisfaction , planning, organizing, directing and controlling the kitchen operation and administrative requirements based on the budget and standards set by the Hotel and Government authorities

KEY ACCOUNTABILITIES:

Adhere to Dubai Municipality Rules and Regulations, keeping records of all requirements
Forecast the expected covers for meal plans in advance to ensure adequate supplies are ordered and waste minimized
Costing of menus and maintenance of food costing as per the budget
Purchasing of daily market list requirement
Menu design and planning Quality specification of food items
Change buffet menu periodically
Food items purchases based on the budget
Kitchen Staff Training
Supervise chefs and food preparation workers
Managing a staff of kitchen employees, including hiring, training, scheduling, motivating, and firing.
Evaluating the taste, texture, and appearance of food items during preparation to ensure they meet quality standards.
Plan menus schedule and kitchen production
Prepare purchase orders and store requisition according to production requirements
Produce special menus for functions
Prepare recipes and costing according to Hotel budget
Prepare and supervise cooking process for daily buffet
Prepare the daily market list and ensure minimum wastage
Inspect daily deliveries and ensure quality of all items
Ensure that hygiene procedures are implemented at all times, safety and cleanliness of the kitchen as well be expert in food storage of cooked and raw food.
