. Lead, mentor, and manage culinary team.
• Develop and plan menus and daily specials.
• Create prep lists for kitchen crew.
• Manage food costing and inventory.
• Maintain standards for food storage, rotation, quality, and appearance.
• Ensure compliance with applicable health codes and regulations.
• Establish maintenance and cleaning schedules for equipment, storage, and
work areas.
• Participate in interview process and selection of kitchen staff.
• Schedule staff and assist in human resources processes as needed.
• To Create Menus as per requirement of the events / Clients/ new concepts.
• To carry out the smooth and efficient running of Kitchen activities as
appropriate.
• To make sure that food labels are always updated.
• To ensure minimum kitchen wastage.
• To ensure knowledge of the product is maintained and communicated to all
relevant personnel.
• To report any maintenance issues to the management immediately.
• To comply with all HACCP and Municipality policies and procedures to ensure
that all statutory regulations are observed.
• To liaise with the Head Chef/Sous Chef and implement new menu/dishes/systems where applicable.
• To ensure all statutory regulations are adhered to, such as food hygiene policies.
• To create manuals for all food items being produced with clear nutritional information, ingredient quantities, methodology and pictures
• To prepare tastings for new menu items for management and to coordinate with them the best menu items for the company vision
• To aid the marketing team with food photoshoots by prepping food items and designing them in a unique manner.
• To aid in any consulting projects for customers by giving advice on the best practices to reduce cost, enhance taste and increase efficiency
• To empower staff to learn new skills daily and challenge them to enhance their skillset.
